Description
This appetising, crisp white is named after the many rivers that run their course across the Bio Bio region, from the Andes to the coast. Bio Bio itself means 'big, big' in the local tribe Mapuche's dialect, and refers to the largest river of all.
Winemaker at the cellar is Cesar Morales, affectionately known as 'the bear'. He manages all the many vineyard sites owned by the Emiliana cellar, in many prime regions across the country.
Seven Rivers is pure Sauvignon Blanc all harvested from the unique Bio Bio region in the very south of Chile. Because the style of this white is crisp and aromatic, the grapes have to be harvested while they still have plenty of acidity.
This is not so much of a problem in Bio Bio as it is renowned for its misty, rainy weather, which gives protection from the hot sun. 2007 was particularly good for crisp whites too - a long, drawn-out vintage in Chile with outstanding results. "The quality is great - the wines are expressive in aromas, full in colour and concentration" said Wine Spectator.
To make the most of Sauvignon's varietal character, the wine was cool fermented and bottled young to retain lots of zippy freshness and herbaceous flavour.
