Serving suggestions: This is a crisp, aromatic white that is great on its own. It is also excellent with grilled lemon sole, oysters, mussels, a fennel or pea risotto, or salads. Drink by end 2010.

Domaine Olivette is a rare white from the Languedoc's Minervois region. This part of southern France is best known for leading the way in the revival of quality red wines in the Midi, but high in the hills, it can produce very crisp, stylish whites too.

This is one from the Bonfils family. Hugely experienced and also experimental, they are at the forefront of the quality revolution in the Languedoc. They own a number of châteaux in the Midi, including the famed Château de Vaugelas in the Corbières and Château Millegrand-Mourral in the Minervois, the top red of which were described as Premiers Grands Vins Classés in the Dussert Gerber 2006 Wine Guide.

Olivier Bonfils and his three sons run the estates, most recently employing the very finest of Bordeaux: as consultants, they have brought George Pauli into the team, renowned for his winemaking at Château Gruaud-Larose, a 2ème Cru Classé in Saint-Julien and Olivier Bayle, formerly of Château Lafite.

This superbly elegant Sauvignon will match up to Sancerre's finest. Its grapes all come from vineyards planted at 900 metres, which accounts for much of its steely, crisp fruit.
