Most Cava is produced by big wineries in Catalonia, but here’s one from a small producer based near Valencia, determined to outclass his northern neighbours. Made using the classic Champagne method, it boasts a fine mousse and a lovely complexity.

Dominio de Los Duques is made under the stewardship of Don Vicenté Garcia, who is something of a hero to his fellow winemakers in Valencia. When Catalan growers lobbied to restrict the term Cava to their own wines, they offered to make an exception for him. Instead of accepting, he took them on and fought for the rights of all the small growers in his region – and won! Thanks to Vicenté, Cava is produced in over 150 municipalities throughout Spain, and his home town Requena, some 40 miles from Valencia, is one of the finest. Matured for over 12 months, Dominio de Los Duques is a lovely pale gold colour with fine persistent bubbles and delicate floral aromas. Lift a glass to toast any special occasion or just enjoy as a refreshing apéritif.
