Founded in 1835, Gonzalez Byass is one of the top names in Jerez. The family produce sherry across the range – from amazing, layered Amontillados and Olorosos to the world famous, bone dry, savoury Tío Pepe. Each barrel used to be marked with a strike for Fino, a circle for Oloroso, and palmas for Finos that were exceptional and still retained their flor despite their age. The finer and older these Finos, the more palmas markings. The outcome is Gonzalez Byass’ superb, innovative Dos Palmas collection: a 6 year old, this 8 year old and a 45 year old. These vats gradually lose their protective layer of flor and oxidise, the oxidation producing a wonderful nutty richness. Trendily en rama (unfiltered), this is a hugely complex wine to savour.
