Imaginació is a very fine wine, powerful, rich and yet beautifully refined. It comes from Priorat, which today is home to some of Spain’s most exciting wines. The consultant winemaker is Gilles Pauquet, who also works in Saint Emilion and Pomerol for legendary Châteaux Cheval Blanc and La Conseillante. Priorat, a mountainous enclave in Tarragona in northeast Spain, takes its name from the Scala Dei priory, abandoned long ago and now in ruins. Imaginació is produced at a small family cellar in the village of Gratallops, among some of the region’s most celebrated vineyards. Matured in top quality French oak, it displays lavish aromas of prunes, currants, cigar box and cedar. Decant two hours in advance and enjoy with red meat and game dishes.
