White Champagne (except Champagne labelled Blanc de Blancs) is made from a blend of red and white grapes, but the juice is pressed from the grapes so quickly that the red pigment in the skins does not have time to colour the wine. Blanc de Noirs is made purely from red grapes, yet is still white!
