Tasting note
Colour - Deep red.

Serving suggestions
This intense red is in its element with roast beef with Yorkshire pudding, a rich vegetable gratin, or mature cheeses. However, with two years age, it is soft enough to drink solo. Drink by end 2009.

Description
Andrew jefford is a big fan of the small, lesser-known, but high-quality Vin de Pays areas of southern France. In his book The New France, he writes "the wines of the Languedoc are surging in quality at present, and the best of them are overwhelmingly AOC; good terroir-based zonal Vin de Pays, like those of the Côtes de Thongue, may well become AOC in time."

Domaine d'Aubaret lies in the acclaimed appellation of Faugères, with its vineyards situated in the valley of Thongue to the west of Pézenas in the Hérault department of the Languedoc. It is the property of the hugely progressive and quality-focussed Bonfils family, who own a number of premium estates in the Languedoc-Roussillon and also a couple in Bordeaux.

The team behind this wine are the two brothers Jerôme and Olivier, the former as winemaker and the latter as viticulturist.

2006 was a superb vintage in the Languedoc, giving succulent reds with impressive depth of flavour. To assist with this vintage, the Bonfils family enlisted the help of ex-Lafite consultant Olivier Bayle. Its quality was recognised at the prestigious wine competition Concours Général Agricole Paris, where it was awarded a Gold medal. A splash of Merlot was used to soften the edges and add some plummy richness to the wine.
