Reasons why this ripely fruity, yet crisp wine is exceptional are many and varied. As anyone who's visited the south of France will tell you, warm sun is a major feature of the region. So much so that its wines are often endowed with New World ripeness. Find the right 'terroir' (combination of soil, aspect and microclimate) and you have the potential to make great wine.
And that is precisely what the Greuzard family did 15 years ago. Leaving their native Burgundy, where vineyard prices were extortionate, they moved to the affordable Languedoc region. While the parents sought out the perfect vineyard site, the children studied viticulture and winemaking. They chose the ancient Domaine de l'Herbe Sainte - so named for its abundance of wild, medicinal herbs such as santolina, rosemary and arnica. The soil is incredibly stony so the vines (not to mention the owners!) have had to work really hard to get established. Grape yields are naturally low and quality rewardingly high. Smart practices such as eschewing herbicides and embracing night-time harvesting have lent a wonderful purity and freshness to this classic French Chardonnay.
