It's only made in the very best vintages, using fruit sourced near Carcassone - a region famed for its cool-climate Chardonnay. Winemaker Jean-Marc Sauboua has won plenty of awards for his wines and has developed an extensive network of grape-growing friends in the area, which allows him to cherry-pick only the very best fruit.
Complex flavours of lemon, lychee and toasty butter from nine months spent mellowing in the best oak barriques. Rich and fat, with a long dry finish. Like fine Meursault, it's a must for luxury dining.
