Cour des Consuls is a classic found only in this corner of France, made in hobby-like quantities by a winemaker who is a cult figure to rosé specialists, Jean-Pierre Chanteraud. Almost every bottle of his mouth-watering wine is snapped up by Toulouse's most stylish restaurants.
