Lush rosé Champagne, made for us by Herr Collet at the Avize cellars who, incidentally, also provide the grape must for Dom Pérignon, Mumm and Laurent-Perrier. We're in good company. Hand-harvesting, patient cellaring and fastidious attention to detail make this gorgeous, strawberry-scented pink a luxurious indulgence. Yet compared to some well-known alternatives it's very affordable. Aged on its lees (the 'expired' yeasts that created the secondary fermentation and bubbles) in bottle for three years prior to being disgorged, it has that characteristic yeastiness supporting layers of luscious strawberry fruit. The bubbles are tiny and continuous, a sure sign of finer quality sparkling wines.
