There was a time when Greek wine meant resin scented retsina and little else. Well, here's a wine "to banish old preconceptions" (Wine Spectator). Pavlidis Estate was founded by Christoforos Pavlidis in 1998 in an area that has seen wine production since ancient times. All grapes are estate grown to guarantee quality, and the winery's as impressive as anything you'd see among Bordeaux's great estates.Thema uses the Assyrtiko grape, "a high quality variety designed to keep its acidity when grown in hot conditions" (Jancis Robinson MW). Blended with Sauvignon, it displays wonderfully exotic fruit and freshness in equal measure. We recommend serving it chilled with Summer salads, fish and chips, garden pea risotto, Thai dishes or seafood.
