As wine critic Robert Parker notes, "When Languedoc pioneer Aimé Guibert planted his first vines in 1972 he was convinced that, improbable though it must have seemed to virtually any other observer at the time, his property and wine would gain worldwide renown. And it did." The secret is in the estate's superb terroir - rocky scree left by glaciers retreating after the ice age has created the perfect conditions for growing really high quality grapes.Today Véronique and Aimé's son Samuel is in charge of winemaking and this is his flagship red. It comprises mostly Cabernet, the remainder being made up from treasured, local varieties, traditionally vinified and matured in part new oak for over a year. A fine partner to a full Sunday roast.
