Along with the lesser known Pouilly Loché and Pouilly Vinzelles, Pouilly Fuissé is part of a limestone hollow at the centre of the Saint Véran appellation, home to the best wines of Burgundy's Mâconnais region. This example comes from Christophe Cordier, whose father founded the family domaine in 1968 with just 5 hectares of vines. When Christophe took the helm in 1987 he began to produce and bottle his own wines, quickly gaining a reputation as one of the hottest producers in the region. This luxurious oak fermented white is delicious to drink on its own, but is probably best suited to be enjoyed with your finest sauced white meat or fish dishes, seafood, snails, risotto, or gougères filled with cream cheese and smoked salmon, perhaps.
