Matteo Mattei is a highly experienced oenologist in charge of winemaking at the Tenimenti cellars in cool climate Veneto. He was responsible in 2011 for Colombella, a white made much in the style of the country's classic wine, Soave.Matteo combined Garganega grapes from two vineyards - from the stony soils of Merlara, which produces particularly aromatic wine, and the richer soils of Bonaldo that contributes a fruitier style. In both, the significant day and night temperature difference brings out the grapes' perfumed character. He added a generous portion of Pinot Grigio to lend a little creaminess and spice.A refreshing apéritif, Colombella would also complement traditional antipasti, risotto or simple grilled white fish.
