After perfecting his sparkling white, Laurent Mingaud wanted to make a rosé too, but appellation laws would not allow it. Undaunted, he petitioned the authorities and won. This pioneering pink gains its salmon hue in the same manner as the top Champagnes, from gently pressed Pinot Noir (others merely blend red and white wine).Elegant and distinguished with classic, strawberry scented finesse, this exquisite rosé should be enjoyed when you have something to celebrate, although opening a bottle is a celebration in itself.
