Like nearby Sancerre, Pouilly-Fumé is famous for its superb Sauvignon Blanc. Both regions bring out the wonderful crisp gooseberry flavours of this classic variety, but the wines of Sancerre tend to be minerally and herbaceous, while those of Pouilly-Fumé are more steely with a subtle smokiness - hence the name.Young Jean-Marie Raimbault is passionate about Sauvignon Blanc - he uses the grape to make a small parcel of rare vendange tardive (meaning 'late harvest', and usually sweet) wine each year, just for the love of it. From an excellent vintage, Cuvée Cassandra 2010 makes an elegant and refreshing apéritif, and is perfectly paired with white fish. It also makes a fine partner to light pasta dishes, poultry or a seafood salad.
