Domaine des Costes is a small property in the Hérault owned and run by the Fabre family, whose predecessors joined forces with their neighbours in 1901 to create a shared cellar - freeing themselves from the prices dictated by powerful wine merchants. Though they still send their grapes to the local cellar, they insist they are vinified separately, as their vines produce some of the most concentrated fruit in the region.Winemaker Delphine Glangetas goes to great lengths to capture the distinct taste of Domaine des Costes' fine terroir, bottling the wine unoaked so all the clear, bright flavours shine through. The Fabres recommend serving the wine with lamb chops, a char grilled steak with ratatouille, or a vegetable gratin.
