Think you know about Aussie Chardonnay? Think again. The Giant Steps approach seeks to achieve the definitive expression of the vintage in a single vineyard.
Wines are made on a tiny scale and some vineyards produce just 200 cases a year. In the most challenging years, they might decide not to produce a Giant Steps wine at all.
The meticulously tended vineyards are all hand-harvested. This particular Chardonnay was fermented in cask using indigenous yeasts before being aged on its lees in mainly old oak barrels.
A beautifully balanced style of Chardonnay, it's creamy and textured, yet crisp and satisfying. Yes, it's oaked, but it's perfectly integrated - toast without the butter rather than a big dollop of vanilla. A must-try for lovers of fine whites.
