Coopers is Australia's last family owned brewery, founded by Thomas Cooper (and his 19 children) in 1862 using a recipe reputed to cure illness. Word spread and he was soon brewing for a growing band of loyal customers. The Sparkling Ale is still handmade by the family - no additives, no preservatives - and is widely known to be the preferred beer of Australia's discerning winemakers, due to its extra flavour.Coopers is bottle fermented and therefore has a natural yeast sediment in the bottle. Incidentally, the same is true of Champagne, though since the 19th century Champagne makers have gone to the expensive effort of disgorging it prior to sale to ensure clarity. Take the Cooper family's tip and mix into the beer for a richer flavour.
